An ideal accompaniment for curry, this Indian recipe for Adrak Chutney is quick and easy to make. If you have a blender the whole operation takes no more than W minutes. This chutney must be eaten immediately or, if stored in a closed jar in the refrigerator, within two days.

juice of 2 lemons
4 teaspoons sugar
4 oz. fresh ginger, peeled and chopped
3 oz. sultanas
1 clove garlic
1 teaspoons salt
Directions:
Put the juice of the lemons, 2 teaspoons sugar and all the other ingredients into an electric blender. Blend until the mixture is smooth. Taste and if necessary add the juice of the other half lemon and the rest of the sugar. If you arc using a hand chopper be sure to chop the ginger thoroughly as it tends to be fibrous. Serve in a small glass bowl.
