almond-appleThis is an inexpensive and attractive dessert. The apples should be very tart for the best results.

4 SERVINGS
8 oz. [1 cup] granulated sugar
12 fl. oz. [11/2 cups] water
4 large, well-shaped, cooking
apples, peeled and cored
1/4 teaspoon powdered cloves teaspoon powdered cinnamon
5 oz. [1 tablespoon] butter
2 oz. [1/5 cup] almonds, blanched and slivered

Directions:

  1. In a medium-sized saucepan, over low heat, dissolve the sugar in the water. When the sugar is completely dissolved raise the heat to high and boil the syrup for 5 minutes. Add the apples, lower the heat and simmer covered until the apples are tender.
  2. Preheat the oven to moderate 350°F (Gas Mark 4, 180°C). Remove the apples from the saucepan, place them in an ovenproof dish and set aside. Blend the cloves, cinnamon and butter into the syrup in the saucepan and return it to the heat. Boil the syrup rapidly until it becomes thick.
  3. Pour the syrup into the centers of the apples. Spike the apples all round with the slivered almonds. Bake in the oven for about 15 minutes or until the almonds become brown. Serve very cold with cream.
