These crunchy biscuits are easy to make and can be served with ice cream, fruit desserts, and with tea.
ABOUT 50 SMALL BISCUITS
6 oz. [3/4 cup] sugar
8 oz. [1 cup] softened butter
1 egg yolk
8 oz. [2 cups] flour, sifted
8 oz. [11/3 cup] almonds, blanched and chopped
1/4 teaspoon almond essence
Directions:
- Preheat the oven to moderate 350°F (Gas Mark 4,180°C).
- Line baking sheets with greaseproof paper. In a medium-sized mixing bowl, beat the sugar and butter with a wooden spoon until they are light and creamy. Beat in the egg yolk. Mix in the flour, chopped almonds and almond essence.
- Put flour on your hands and pat the dough into a ball. Cover it and chill in the refrigerator for one hour.
- Shape the chilled dough into small balls and flatten into rounds. Place on baking sheets and bake for 15 to 20 minutes.
