ABOUT 50 SMALL BISCUITS
6 oz. [3/4 cup] sugar
8 oz. [1 cup] softened butter
1 egg yolk
8 oz. [2 cups] flour, sifted
8 oz. [11/3 cup] almonds, blanched and chopped
1/4 teaspoon almond essence

Directions:

  1. Preheat the oven to moderate 350°F (Gas Mark 4,180°C).
  2. Line baking sheets with greaseproof paper. In a medium-sized mixing bowl, beat the sugar and butter with a wooden spoon until they are light and creamy. Beat in the egg yolk. Mix in the flour, chopped almonds and almond essence.
  3. Put flour on your hands and pat the dough into a ball. Cover it and chill in the refrigerator for one hour.
  4. Shape the chilled dough into small balls and flatten into rounds. Place on baking sheets and bake for 15 to 20 minutes.
