A simple, fresh salad, this is a good accompaniment to cold fowl, fish or meat.
4 SERVINGS
1 lb. crisp dessert apples
1 small cucumber
juice of 1 lemon
teaspoon salt
2 grindings black pepper
2 fl. oz. double cream cup heavy
cream], whipped
lettuce leaves, washed and dried
Directions:
- Peel, core and cut the apples into thin slices. Put the apple slices in a dish and sprinkle with the lemon juice to prevent them from discolouring.
- Wash the cucumber and cut it into thin slices. Add the slices to the apple in the bowl. Sprinkle with salt and pepper. With a spoon, gently toss the apple and cucumber slices so they are evenly mixed. Stir in the whipped cream.
- To serve, line a salad bowl with lettuce leaves. Pile the apple and cucumber mixture in the centre.
