This inexpensive and easy-to-make dessert is a favourite with children. Other fruits, such as bananas, apricots and pineapple rings, may also be used.
4 SERVINGS
4 oz. [1 cup] flour a pinch of salt
2 egg yolks, plus 1 egg white
1 tablespoon cooking oil
5 fl. oz. [5/8 cup] milk
1 lb. cooking apples juice of
1 lemon castor sugar
4 oz. [1/2 cup] butter or cooking fat
Directions:
- Sift the flour and salt into a medium- sized mixing bowl. Make a well in the centre of the flour and put in the eggs and the oil. With a wooden spoon, mix the eggs and oil, slowly incorporating the flour and gradually adding the milk. Mix to a smooth hatter, then beat well.
- Cover and keep in a cool place for 30 minutes.
- Peel and core the apples and slice into rings 1-inch thick. Lay the apple rings on a plate and sprinkle with lemon juice and castor sugar.
- Heat the butter or fat in a large frying- pan over high heat. Using a skewer, dip the apple rings into the batter and drop them one by one into the hot butter. Cook the rings on both sides until they are golden brown. Arrange on a plate and dredge with castor sugar. Serve at once.
