Apple Snow is a light, frothy dessert which can be served with sponge fingers or biscuits. It is inexpensive and easy to make.
4 SERVINGS
1 lb. cooking apples
rind of 1 lemon
2 tablespoons water
4 oz. castor [1/2 cup fine] sugar
2 egg whites
Directions:
- Preheat the oven to fairly hot 375°F (Gas Mark 5, 190°C).
- Core the apples and, with a sharp knife, slit the skin round the centre. Place the apples in a fireproof dish with the lemon rind and 2 tablespoons of water. Bake until the apples are soft. This will take about 1 hour.
- Discard the lemon peel. Allow the apples to cool, remove the skins and rub through a sieve.
- Whisk the egg whites until they are frothy.
- Add the sugar a little at a time and beat until the mixture stands up in peaks when the whisk is removed.
- Gradually add the apple pulp, beating until it is thoroughly mixed with the egg white.
- Taste and add more sugar if necessary. Serve cold.
