Applesauce CakeThis moist, spicy cake has a pleasant cinnamon flavour. It can be served plain or covered with a caramel icing.

6 SERVINGS
a little butter, softened
8 oz. [2 cups] plus 1 tablespoon flour
1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon powdered cinnamon
1/2 teaspoon ground cloves
6 oz. [1 cup] soft, brown sugar
4 oz. [1/2 cup] butter, softened
3 eggs
4 oz. [3/4 cup] raisins
4 oz. [3/4 cup] walnuts, chopped
8 oz. [1 cup] apple sauce

Directions:

  1. Preheat the oven to 350°F (Gas Mark 4, 180°C). Grease an 81/2 inch round cake tin with a little butter and dust lightly with 1 tablespoon of flour.
  2. Sift the flour, salt, baking powder, cinnamon and cloves together. In a medium-sized mixing bowl beat the butter with a wooden spoon until it is creamy. Add the sugar and continue heating until the mixture is well creamed. Beat in the eggs.
  3. Add the flour mixture a little at a time and stir until the batter is smooth. Add the raisins, walnuts and apple sauce. Mix well and pour into the cake tin.
  4. Bake in the centre of the oven for 80 to 90 minutes, or until a thin warm skewer stuck into the centre comes out clean.
