This moist, spicy cake has a pleasant cinnamon flavour. It can be served plain or covered with a caramel icing.

a little butter, softened
8 oz. [2 cups] plus 1 tablespoon flour
1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon powdered cinnamon
1/2 teaspoon ground cloves
6 oz. [1 cup] soft, brown sugar
4 oz. [1/2 cup] butter, softened
3 eggs
4 oz. [3/4 cup] raisins
4 oz. [3/4 cup] walnuts, chopped
8 oz. [1 cup] apple sauce
Directions:
- Preheat the oven to 350°F (Gas Mark 4, 180°C). Grease an 81/2 inch round cake tin with a little butter and dust lightly with 1 tablespoon of flour.
- Sift the flour, salt, baking powder, cinnamon and cloves together. In a medium-sized mixing bowl beat the butter with a wooden spoon until it is creamy. Add the sugar and continue heating until the mixture is well creamed. Beat in the eggs.
- Add the flour mixture a little at a time and stir until the batter is smooth. Add the raisins, walnuts and apple sauce. Mix well and pour into the cake tin.
- Bake in the centre of the oven for 80 to 90 minutes, or until a thin warm skewer stuck into the centre comes out clean.
