Jam glazes are used to give a glossy surface to fruit flans and tarts. In classic recipes, apricot jam forms the basis of the glaze for yellow fruits.
4 FLUID OUNCES [1/2 CUP]
4 tablespoons apricot jam
3 fl. oz. [ cup] water
1 teaspoon lemon juice
Directions:
- Combine the jam and water in a small saucepan.
- Stirring, cook over moderate heat for 5 minutes.
- Add the lemon juice and stir well.
- Remove from the heat and strain.
