Elegant and expensive, this dessert is easily made and can be prepared a week or even two weeks in advance of a special dinner party. Apricots in Brandy can be served alone or as a sauce for ice cream.
6 SERVINGS
1 lb. dried apricots
4 oz. [1/2 cup] sugar
brandy
Directions:
- Place the apricots and sugar in a mixing bowl.
- Pour over enough brandy to completely cover the fruit.
- Cover and leave in a cool place for at least 36 hours.
- The longer the apricots are soaked the more the flavor improves.
- Serve chilled.
