This is a simple dish to make for an informal dinner party. Barbecued Pork may be served with sautéed potatoes and broad, or French, beans.

1/2 teaspoon ground ginger
1/4 teaspoon cayenne pepper
1/2 teaspoon black pepper
2 teaspoons salt
1 tablespoon brown sugar
4 lb. loin of pork, boned and rolled
2 tablespoons vegetable oil
SAUCE
2 tablespoons chilli sauce
2 tablespoons soy sauce
2 tablespoons Worcestershire sauce
2 tablespoons tomato purée
2 teaspoons prepared mustard
1 tablespoon vinegar
1 teaspoon brown sugar
1 garlic clove, crushed
1 large bay leaf
Directions:
- Preheat the oven to moderate 350 °F (Gas Mark 4, 180 °C).
- Mix together the ginger, cayenne, black pepper, salt and sugar in a small bowl. Rub the mixture all over the pork.
- Heat the oil in a large flameproof casserole over moderate heat. Add the pork and brown it well on all sides. Drain all the oil from the casserole.
- Mix all the ingredients for the sauce together. Pour the sauce over the pork. Cover the casserole and place it in the middle of the oven. Cook for 11 to hours, basting occasionally.
- To serve, carve the pork and place the slices on a heated serving dish. Bring the sauce in the casserole to the boil, skim off the fat and strain over the meat.
