This pizza is limited only by your imagination. Top it with
one or more varieties of cheese, such as mozzarella, feta,
cheddar or Parmesan, and then crown it with a Special
Pizza Addition from the selection that follows. Once
you’ve made your own pizza, you’ll never call for delivery
again!

Makes 8 servings

Crust:
1 envelope active dry yeast
3 cups sifted all-purpose flour
1 1/2 teaspoons salt

Basic Tomato Sauce:
2 teaspoons olive oil
5 ounces ground chicken or lean chicken sausage (10%
or less fat)
1/2 cup chopped onion
2 garlic cloves, minced
1 cup tomato puree
1/2 teaspoon dried oregano leaves
1/2 teaspoon salt
1/4 teaspoon black pepper

Topping:
1 or more Special Pizza Additions (recipes follow)
3 ounces shredded or grated cheese (see note above)

To prepare crust, in small bowl, sprinkle yeast over
3/4 cup + 2 tablespoons warm water (105?115oF); let
stand 10 minutes.
Set aside 1 tablespoon flour. in food processor,
combine remaining flour, the salt and yeast mixture;
process 1 minute.
Spray large bowl with nonstick cooking spray; place
dough in bowl. Cover bowl loosely with plastic wrap;
let dough rise in warm, draft-free place until doubled
in volume, about 2 hours.
Sprinkle work surface with reserved 1 tablespoon
flour. Punch down dough; place on prepared work
surface. Pat dough into a 12″ circle.
Spray a 12″ pizza pan with nonstick cooking spray.
Transfer dough to pan; shape edge to form rim.
To prepare sauce, in medium saucepan, heat oil; add
chicken and onion. Cook over medium heat, stirring to
break up meat, until onion is golden brown and
chicken is no longer pink. Add garlic; cook, stirring
constantly, 30 seconds longer. Add tomato puree,
oregano, salt and pepper; reduce heat to low. Simmer,
stirring occasionally, 15 minutes, until flavors are
blended.
Adjust oven racks so as to divide oven into thirds;
preheat oven to 450oF.
Spread crust evenly with sauce to within 1/2″ of
edge. Arrange Special Pizza Additions over sauce;
bake in lower third of oven 10?15 minutes, until
bottom is browned. Sprinkle with cheese; bake 10?15
minutes longer, until crust is golden brown and
topping is hot.

Slice 2 cups fresh vegetables, such as mushrooms,
onions, bell peppers or zucchini, alone or in any
combination. Saute vegetables in medium non-stick
skillet in 1 teaspoon olive oil over medium heat, stirring
constantly, until soft.

In small bowl, combine 1 cup part-skim ricotta cheese,
the shredded or grated cheese, and 4 ounces crumbled
cooked ground chicken or lean chicken sausage (10% or
less fat). Spread on unbaked crust to within 1/2″ of
edge; bake in lower third of oven 20?30 minutes, until
crust is golden brown and topping is hot.
