An excellent accompaniment to cocktails, salted almonds are widely available in jars and cans, but they are easy to make at home.
8 oz. [11/2 cup] whole almonds, blanched
4 oz. [I cup] butter
4 tablespoons [1 cup] cooking oil salt
Directions:
Melt the butter with the oil in a large frying-pan. Put in the almonds and sauté them over a moderate heat, turning them frequently with a slotted spoon. When the almonds are golden brown, remove them with the spoon and spread them out on kitchen paper towels. Sprinkle them with salt while they are still warm, making sure they are well coated.
Salted almonds can be stored in an airtight container for several weeks.
