A healthy and nutritious way of serving chicken to children. Delicious hot with rice or jacket potatoes, or cold as part of a packed lunch.
SERVES 4
3 boneless chicken breasts (approx. 175 g/6 oz each)
30 m1/2 tbsp smooth peanut butter
30 m1/2 tbsp low fat natural yogurt
freshly ground black pepper
grated rind 1/2 orange
juice I orange
15 m1/1 tbsp clear honey
GARNISH
peeled orange segments
sprigs of watercress
Directions:
- Skin and cut the chicken breasts into small, even-sized cubes (approx. 2 cm/3/4 in). Thread them onto 8 wooden kebab skewers, which have been soaked for 1/2 hour to stop them burning.
- Mix together the peanut butter, yogurt, orange rind and black pepper to taste. Spoon the mixture evenly over the skewered chicken. Cover loosely and chill for 4 hours.
- Arrange the skewers on the rack of the grill (broiler) pan, and spoon over any remaining marinade. Grill (broil) for 4 minutes under a moderate heat. Turn the skewers and grill (broil) for a further 3 minutes.
- Mix the orange juice with the honey and spoon over the kebabs. Return to the grill (broiler) for a further 2 minutes.
- Serve hot or cold, garnished with orange segments and watercress
