Almonds with a sugar or honey coating have been known from earliest times and were recorded as having been served in Ancient Rome at family celebrations. Home-made sugared almonds may not look as beautiful as the commercially made variety, but they surpass them in flavour and texture. They can be stored, for about a week, in an airtight jar.
An excellent accompaniment to cocktails, salted almonds are widely available in jars and cans, but they are easy to make at home.
The kernel of the fruit of the almond tree of which there are sweet and bitter varieties. The trees are widely grown in Jordan, Spain, North Africa, France and the United States. Sweet almonds are used in making cakes, biscuits, sweets and in savory dishes. They are also roasted, salted, sugared and ground.
