This recipe for baked apples, is inexpensive, easy to cook and a pleasant dessert. It can be varied by adding cinnamon, nutmeg, ground cloves or mace to the sugar. Dried fruit may be substituted for the sugar or the apples may he basted with dry sherry during the baking and served with sherry flavored custard sauce.
The most important and widely grown fruit in the temperate climates of the world, the apple has been cultivated for over 3,000 years. Apples were always particularly valued for their keeping qualities and, until refrigeration, gas and other storage methods were introduced in the twentieth century, they were almost the only fresh fruit available during the winter.
This is an inexpensive and attractive dessert. The apples should be very tart for the best results.
