This unusual and inexpensive dessert is known in Germany, where it originated, as Apfelfannkuchen. The pancakes could also be served for tea or at a late Sunday breakfast.
Delicately flavoured, crisp and cut into cakes, Alexander Torte was traditionally eaten as a lunch or dinner dessert in Latvia, but it can also be served at tea. It should be made early on the day you plan to serve it, or even the night before, because the icing must be hard before the torte is cut.
Alebele originates in Goa on the west coast of India where Portuguese influence is evident in the cooking. The original recipe calls for fresh coconut and jaggery, a crude, dark, palm sugar. This recipe is an adaptation using desiccated coconut, brown sugar and treacle [molasses].
