Tropical Fruit SaladCombinations such as this one, which comes from Polynesia, areĀ open to variation.
for the salad:

1 cup papaya, diced
1 cup mango, diced
1 cup pineapple, diced
1 cup litchis, peeled
1/2 cup kumquats, quartered
1 cup shredded fresh coconut
1 tablespoon minced fresh ginger
2 tablespoons grated orange peel
for the dressing:
1 cup orange juice
I tablespoon lemon juice
1-2 tablespoons brandy (optional)
whipped cream for serving

Directions:

1. Combine all the salad ingredients in a large bowl. Mix the dressing ingredients together, pour over the fruit and chill.
2. Spoon the salad into coconut shells or scooped-out pineapples. Serve with whipped cream.
