I love christmas, and I love gingerbread! Though this ones are special ones, healthier ones.. ;) I was so happy last christmas when I managed to bake gingerbread - made without gluten or sugar! It contains butter, so if you are very sensitive to dairy (most people can handle butter but not milk or cream etc.) you could try with either veg. oil or goat butter.

1 dl butter
tiny bit of stevia or 2 tbsp honey
2 eggs
3 dl buckwheat flour + some for later
1 dl corn flour
1 tsp baking powder
1,5 tbsp ground cinnamon
1,5 tbsp ground ginger
¾ ground clove
¾ ground bitter orange peel.
Mix all the ingredients and knead it together into a dough. Leave it in the fridge for at least 3 hours or
until cool.
Preheat oven to 175 degrees C.
Roll out the dough very thin and cut into desired shapes with cookie cutters.
Place cookies on ungreased cooking sheet. Bake for 8-10 minutes in the preheated oven.
When the cookies are done, they will look dry, but still be soft to the touch. Remove from the baking
sheet to cool on wire racks.
