Black Bean Lettuce Bundles


This is a quick and easy lunch meal!

Ingredients:

  • 1 can low sodium black beans
  • 1 small red pepper, chopped
  • 1 cup baby arugula
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 2 stalks green onion. chopped
  • 1 carrot, shredded
  • 4 outer leaves Boston (Bibb) lettuce (see notes)
  • Sesame seeds for garnish

Directions:

  1. In a small bowl, mix together the beans, carrot, pepper, cumin, coriander and green onion.
  2. Place the bean mixture into the center of the lettuce leaves. You can leave them open or wrap them up. I tend to leave mine open and just sort of wrap it up as I eat it.
  3. Top with sesame seeds.
  4. Serve on a bed of arugula.

Helyn's Notes: I use Boston lettuce for this dish because the leaves are usually soft and pliable and make for easy wrapping. You could also use Romaine lettuce leaves and just leave them open.


Serves 4. Enjoy!
