In all honesty, adobo is one of the first dishes I screwed up. No shame in admitting that. I mean look at where I am right now. I'm a proud owner of more than a hundred recipe blog; and I'll keep on going until I can no longer cook! haha! Take that adodo! :))
To those who are not familiar with the dish, adobo is a Filipino dish that plays with soy sauce and vinegar. I hear some cook adobo with just the vinegar; and they use fish sauce to counter acidity. (Hmm, that seems like more of a paksiw dish to me. Perhaps, I'll try one time, though.) Anyway, I, too have an interesting adobo recipe under my sleeves. This one's adobong spare ribs with chicken. I promise you, you'll love it!
Let's begin.
Ingredients in cooking adobong spare ribs:
- spare ribs, pat dry with paper towels
- chicken, cut into desired size

- vinegar
- soy sauce
- paprika powder

- fish sauce
- onions, cut

- ground black pepper
- black pepper corns
Here are the steps in cooking adobong spare ribs.
1. Rub the spare ribs with salt and pepper, evenly. Let it rest for 5-10 minutes.

2. Fry both sides of the spare ribs in a hot pan with oil.
4. Using the same pan, saute' the garlic and onions.
5. Fry the chicken into the dish.

6. Season with a little fish sauce to taste. Stir well.
7. Transfer the dish into a deep bowl.
8. Put the spare ribs in together with the saute'd chicken, garlic and onions.

9. Put equal parts of vinegar and soy sauce.
10. Add the whole pepper corns into the dish.
11. Add some paprika to make the sauce lighter in color.

12. Slow-cook for under an hour with low heat. Cover the pan.
14. When the ribs are nice, tender and a bit flaky, add the some dried bay leaves.
15. Let it boil one last time at a higher heat.
16. Remove from the pan once it boils.
17. Serve with hot steamy rice.

Total time: 1 hr 50 minutes

- ground black pepper
- black pepper corns
- salt

Note that the ribs will brown beautifully since you've pat it dry first before seasoning with pepper and salt.3. Set aside the spare ribs for later when cooked.
4. Using the same pan, saute' the garlic and onions.
5. Fry the chicken into the dish.
6. Season with a little fish sauce to taste. Stir well.
7. Transfer the dish into a deep bowl.
8. Put the spare ribs in together with the saute'd chicken, garlic and onions.
9. Put equal parts of vinegar and soy sauce.

12. Slow-cook for under an hour with low heat. Cover the pan.
Add another half an hour make sure the ribs are soft and tender.13. Test the taste of the dish. Add salt or vinegar, according to preference.
14. When the ribs are nice, tender and a bit flaky, add the some dried bay leaves.
15. Let it boil one last time at a higher heat.
16. Remove from the pan once it boils.
17. Serve with hot steamy rice.

Ingredients
- Spare ribs
- Chicken
- Vinegar
- Soy sauce
- Paprika powder
- Fish sauce
- Cooking oil
- Garlic
- Onions
- Pepper
- Salt
- Dry bay leaves
- Pat the spare ribs dry with paper towels.
- Marinate them with salt and pepper.
- Fry until they turn golden.
- Set aside for later.
- Saute garlic and onions in a separate pan.
- Fry the chicken together with the garlic and onions.
- Season with fish sauce and pepper.
- Transfer the dish to a deep bowl.
- Add in the ribs together with the chicken.
- Season with soy sauce and vinegar.
- Put whole peppercorns, paprika and bay leaves.
- Let it boil under low heat for an hour.
- Adjust the taste before serving.
- Serve hot with rice.
