The Buddha Bowl with Karma Kream


I call this the Buddha Bowl because it will really fill up your belly... but won't make it look like Buddha's! One belief popular in folklore is that rubbing Buddah's belly brings health, good luck and prosperity. What better way to ensure your health than to eat nutrient-dense foods? And this dish packs a heaping helping of nutrients.

When I was first introduced to "health food" ... oh, way back in the 70s I think it was, the staple meal was brown rice with steamed vegetables. How boring! Well, consider this brown rice with steamed veggies, kicked up a notch or three. The magical "karma kream" adds a lot of flavor to this simple, satisfying and tasty dish... we've come a long way, baby.

Ingredients:

for the bowl ~
  • 1 cup brown rice (I used brown Basmati)
  • 2 cups water
  • pinch of salt
  • 2 carrots
  • 2 small yellow squash
  • 2 cups chopped kale
  • 1 small package sliced mushrooms
  • 1 can black beans
  • sesame seeds for garnish
for the kream ~
  • 1/3 cup raw cashew butter
  • 1/3 cup raw tahini
  • 1" piece of fresh ginger, finely grated
  • 2/3 cup water
  • 2 tsp tamari
  • 1 tsp coconut sugar
  • 1/4 tsp toasted sesame oil
  • squeeze of fresh lemon



Directions:
  1. Place rice, water and salt in medium sized pot. Bring to boil, then reduce heat to low, cover and cook until all water is absorbed (about 45 minutes).
  2. Chop the carrots, squash and kale into about 1" pieces and steam with the mushrooms until tender.
  3. Rinse the beans and warm in a separate pot or pan.
  4. Combine all of the karma kream ingredients and mix until smooth. You can use a blender or just mix it all in a small bowl with a fork. If you use a bowl, add the water a little at a time.
  5. Place some rice in the bottom of a bowl, then the beans, then the veggies and top with a generous amount of the kream. Garnish with sesame seeds.



Serves 2. (Yup, it will fill those bellies!)
