I absolutely love pea sprouts! These are the tiny thin shoots of garden pea plants which are normally served in Chinese restaurants. They are a bit crunchy when eaten raw (just like bean sprouts); and stringy when cooked with a hint of nutty flavor. I love them either way.

All the while, the only sprouts I knew existed were sprouts from mung bean. (I have such a small world. I know! haha! Check out my mung bean sprout recipe in my lumpiang togue post.) Recently though, I discovered that there is another vegetable sprout that is just enjoyable to eat - pea sprouts. I didn't even know the peas have sprouts! Do you?
Anyway, these sprouts, just like togue (monggo bean sprouts), cook very fast. In fact, this recipe I'm sharing with you can be done in about 10-15 minutes. If you have a wok, you'd be able to toss the sprouts better. However, if you don't have one, any cooking dish should do it. As long as you have the complete ingredients, you'll do just fine.
Ingredients in cooking pea sprouts:
- pea sprouts, washed

- garlic, chopped
- shrimps, cut in bits (for added flavor, optional)
- oyster sauce
- fish sauce
- pepper
- hot water
- cooking oil

Steps in cooking pea sprouts:
1. In a small dish bowl add the following:
2. Saute' the garlic in a wok or pan with hot oil.

3. When the garlic turns golden, put the heat to low-medium.
4. Add in the shrimps.
5. Season the dish with a little fish sauce and pepper. Stir well.

6. Add the mixture you prepared in Step #1.

7. Let it simmer under low temp.
8. Add in the sprouts.

9. Stir well until in blends in with the sauce.

10. Bring the sauce to a boil.
11. Turn off the stove, cover the pan until serving time.

12. Serve with hot steamy rice.
In summary:
Prep time: 5 minutes
Cook time: 10 minutes
Total time: 10-15 minutes
(For the sauce: Mix water, fish sauce and oyster sauce in a small dish.)
That's it! A very simple recipe, from my home to yours. Remember me when you cook.
