I woke up a sunday morning with not too much food at home.. But I did have bananas and some flour and eggs to put together a cake. Instead of baking a bananabread I wanted to try banana cookies with some flakes and seeds to make it more crunchy.
Bananas have a special creamy texture when baked, and it gives the cake a sweet taste as a natural sweetner. I experimented, and it came out pretty good! Here is the recipe for you to try it out!
Serves 6 pieces of cookies
1 banana
1 egg
1/2 dl coconut flakes
1 dl oatflakes
1 dl rice flour
1 dl quinoa flour
1/2 sunflower seeds
pinch salt
option: cinnamon
Heat oven to 150°C. Mash the banana with a fork until smooth, and the egg. Put the rest ingredients in the bowl and with a spoon place 6 pieces of the dough on a baking sheet and form as cookies. Bake for 15 minutes.
Serve and enjoy with a nice view, a good friend or a cup of tea....
