Cooking Fried Plantains (Piniritong Saging)

Fried plantains are one of my favorite desserts and snacks in the Philippines. Our piniritong saging (fried plantains in Tagalog) are cooked and enjoyed in so many ways. I like them cut thinly, crispy and covered in caramel crystals. Just like this one below.

Fried plantains have so many variations. You have banana-que's (imagine barbeque-like bananas), banana fritters, fried bare plantains, fried sweetened plantains, fried plantain a la-modes, my favorite spring rolled bananas, banana chips, ...and I'm sure there are others more.

For this post, I'll share with you a simple (yet very tasteful) fried plantains recipe. It's a crispy, sweet treat for kids and adults alike. It's very quick and easy to do, too.

Here's how.

Ingredients in cooking fried plantains:

  •  Plantains (saging na saba), cut length-wise thinly
  • Brown sugar
  • Cooking oil

Steps in cooking fried plantains (piniritong saging):

  1. Heat cooking oil in the pan.
  2. Put the stove in medium to heat heat.
  3. When the oil is ready, fry sweetened plantains.
  4. When the sugar caramelizes, turn the plantains. You want the cooked side to be a little burnt.
  5. When both sides are cooked, put aside to drain.
  6. Let the oil drip in a strainer.
  7. Serve when the fried plantains cool off.
While draining the oil from the fried plantains, you are also waiting for the caramel sugar to harden. It'll be worth the wait when you bite into the crispy flesh of your fried bananas. Soda is not my first choice of drinks, being high in calories and low in nutrition. However, I would be lying to myself if I don't say that... a cold glass of softdrinks or soda drink actually goes well with this snack.

As to the exact measurement of sugar for this recipe, feel free to guess-timate. You can gauge it from the amount I put in my plantains in the above photo.
