Sauteed Green Beans with Onions

Are you planning for Thanksgiving? It's next week and we are starting our lists of things to do. We make green beans every year as one of our side dishes.

Warm green beans sautéed with onions, cayenne pepper and extra virgin olive oil until they are tender and crispy makes a healthy and flavorful side dish. The flavor is so amazing and a little addicting, even my own kids couldn't stop eating them.

Green beans are delightful for vegetarian lovers!
Sautéed with onions, green beans provides enough Vitamins C, Vitamin A, and Vitamin K in just one cup as part of your daily allowance. Such a great source of nutrients and benefits, including a good source of dietary fiber.

They are fat-free and low in calories, whether eaten raw, sautéed or stir fried.  

As sisters, we had a discussion over whether to call them green beans or string beans. So we goggled to find out, and we found out they are one and the same!  So, whatever your preference is, enjoy this vitamin rich vegetable.

It's happens to be one of our favorite side dishes because you can make it a day in advance, then reheat the next day before serving. That helps tremendously when cooking for Thanksgiving! Right?

And, if you noticed we love adding cayenne pepper into our foods; it also benefits the metabolism, helping to give it a healthy boost.  As mom says, it wakes up the flavors!

It's another great way to get your family to eat more greens, and one we think they will enjoy.

Sautéed Green Beans with Onions
  • 1 pound of fresh string beans - washed, ends clipped and discarded
  • 1/2  large onion - chopped
  • 1/4 cup of extra virgin olive oil
  • 1/8 tsp. cayenne pepper
  • salt, pepper and garlic powder to taste

Sauté chopped onions in extra virgin olive oil in a large pan until golden.
Add string beans (while wet).
Add cayenne pepper. Cover pan and lower the heat to simmer. 
This will also steam the beans while simmering.
Cook for 15 minutes, stirring occasionally.
Add salt, fresh cracked pepper and garlic powder to taste.
Taste the beans for tenderness, then remove and transfer to a bowl. Serve.
