Sweet Potato Rosettes + Ending Hair Loss with Guest Author Jeanne Powers!

Today I would like to introduce you to a dear friend of mine, Jeanne Powers. I am including a simple and fun recipe for sweet potatoes with today's post. Sweet potatoes are a great source of the antioxidant beta carotene, which your body turns into vitamin A. Every cell of the body cannot function without enough of this vital nutrient and it helps protect and produce the oils that sustain the health of your scalp. Being low on vitamin A can leave you with itchy, bothersome dandruff. But make sure your vitamin A source is from whole foods, NOT in a supplement form. Isolated beta-carotene in the form of supplements may interfere with the absorption of other crucially important nutrients!

All that said, check out these totally adorable sweet potato "rosettes!" I saw this somewhere online and just had to create them myself. They make such a great, festive presentation, I may have to make them for Christmas!

  • 2 medium-sized sweet potatoes
  • small amount of oil
  • 2 TBS pure maple syrup
  • freshly-grated black pepper, nutmeg and/or parsley to garnish

  1. Preheat oven to 350° F.
  2. Peel the potatoes (or not, your choice)
  3. Carefully slice them thinly on a mandolin. You could try it by hand, but I imagine it would be very hard to get them as thin as you need for this, as well as getting them evenly sliced.
  4. Toss the slices in a bowl with a bit of oil, coating each slice as well as possible (I used a spray oil to keep it to a minimum).
  5. Stack the slices on a parchment lined baking sheet, using the larger slices on the bottoms, and using about 10 slices per stack. Also, as you are stacking, try to offset each slice so it's not totally symmetrical (like a rose!). Two potatoes should make about 12 stacks. 
  6. Cover loosely with foil, like a tent, so it doesn't touch the potatoes. As they bake, the edges of the potatoes will curl up!
  7. Bake for 20-30 minutes, until tender.
  8. After they're baked, brush on some maple syrup. This adds a nice touch of deep sweetness and a beautiful sheen.
  9. Garnish with black pepper, nutmeg and/or parsley if desired.
