Ingredients:
200g Sweet potato
150g Beetroot
Some fresh chive
Cayenne pepper
1 tsp flax seeds
1 tbsp extra virgin coconut oil
salt & pepper
Heat the oven to 170°c.
Wash and peel (or you can also leave the skin if you scrub the vegetables well) the vegetables and cut into smaller pieces. In an oven plate, add the coconut oil and the vegetables and sprinkle some cayenne pepper, salt & pepper on it. Bake for 30-40 minutes, stirring every 10 minutes.
When the vegetables are cooked, take out and let cool for a bit. Now cut the chive, and then serve your vegetables on a plate with some chopped chive, flax seeds and a sprinkle of olive oil on top.
