I love all meats! And so, I will never say no to a good ribs recipe. Let me tell you now that this coffee pork ribs recipe is an absolute delight! I can do without the white coffee glaze, really; but having it in these succulent ribs just gives extra joy and (palpitations) in my heart.

Hubby cooked this pork ribs recipe last New Year’s eve. It was a simple feast for 2. While it was just him and me at home (and our 2yo bub who doesn’t eat much!); we nearly finished the entire dish. That and with a small serving of pasta on the side. It was a restaurant quality meal! We’re definitely doing this again!
Here’s how to make this ribs recipe. I hope you enjoy it as much as we did!
Ingredients:
-Pork ribs, 1kgs, cut into strips or into bit size (depending on how you want them served)
-Cooking oil, for deep frying
For the marinade:
-Salt, 1 tsp
-Sugar, 1 tsp
-Oyster sauce, 4 tbsp
-Sesame oil, ½ tbsp
-Bicarbonate of soda, 1tsp
-Rice flour, 4 tbsp
-Tapioca starch, 4 tbsp
-Eggs, 2 pcs, beaten
-Water, 50ml
We prefer using rice flour and tapioca starch because it gives a good, smooth crunch to the meat without the dough-like after-taste effect of the plain flour. While we don't normally use them at home, it's worth buying them just for this recipe so we get the texture that we want for our ribs.
For the white coffee sauce:
-White coffee, 2 packets (We used the Old Town White Coffee brand. Other brands will do.)
-Sugar, 3 tbsp
-Garlic, 1 bulb, crushed and chopped
-Worcestershire sauce, 4 tbsp
-Ground pepper, 1 tsp
-Soy sauce, 2 tbsp
-Rice or Chinese cooking wine or White wine, 2 tbsp
-Water, 100ml
Directions:
1. Mix all the marinate ingredients in a bowl.
2. Marinate the pork for at least 2 hours.
3. Fry the pork ribs in a hot oil under medium heat for about 7-10 minutes or until golden brown.
4. Drain oil with a strainer.
5. Set aside.

6. Mix the white coffee sauce ingredients in a bowl.
7. Stir thoroughly.
8. Put in a hot pan and stir until the sauce thickens.
9. Once thick, put the pork ribs in. Make sure to cover the ribs thoroughly.
10. Serve with pasta or a glass of cold beer.

Ahhh!!! A cold drink definitely puts this pork ribs dish in its right place. Just a caution though for the pregnant women readers, the coffee will definitely kick in; and your little occupant could get more excited than usual. I mean the little person in my belly kept me up all night (which was fine since we were waiting for the New Year, anyway!). It really seemed like the tiny fella' was having a party of its own in there.
