Spring Tomato, Basil, Bocconcini Salad

An easy and colorful salad made with cherry tomatoes, fresh basil and little mozzarella balls, known as bocconcini.  A refreshing salad from our archives and one that represents the essence of spring and summer, but can actually be served anytime of the year.


 

I wanted to make a salad that my family can have anytime hunger strikes!  So, when they open the refrigerator door they can't say "there's nothing to eat." They will instead go right to this colorful salad which is fresh and ready for them to eat all day long.  Morning, noon and night!

Bocconcini can be found at Costco or in any gourmet supermarket. They are delicious creamy little bite-size mozzarella balls sold in plastic containers. When you combine them with cherry tomatoes, extra virgin olive oil, basil and a touch of garlic, you're creating a wonderful blended balance of richness, color and flavor.  No need to add any vinegar to this salad; but if you wish, a splash of balsamic vinegar can be added for more deliciousness!

Spring Tomato, Basil, Bocconcini Salad
  • 2 cups cherry tomatoes
  • 3 cups fresh mini mozzarella balls
  • 2 Tbsp. fresh chopped basil
  • 1 garlic clove -minced
  • 4 Tbsp. extra virgin olive oil
  • Salt and pepper to taste

Slice each tomato in half and toss in a bowl with fresh mozzarella balls, chopped basil, olive oil, garlic, salt and pepper.  Garnish with fresh basil leaves and serve.

Serves 4  to 6
