Hello friends! Memorial Day is this weekend and so is the Wedding!
Here is a NO bake, red, white and blueberry Greek yogurt pie I made for a gathering last week. This Greek yogurt pie is filled with luscious layers of low-fat plain Greek yogurt (as the cream), and loaded with fresh berries inside and on top. It's one of our Best pies! A 5-minute Greek Yogurt pie that is good for you, even as a dessert!
Packed with protein and antioxidants, it's a healthy pie you can have as a dessert or even in the morning for breakfast. FYI...This pie is so good, I wanted to eat the whole thing myself.
This is one of those quick-and-easy pie recipes you can prepare in just 5-minutes. The cream is made with only 2 ingredients, Greek yogurt and honey.
NO need to cook nor bake anything. And, NO need for eggs, milk, or heavy cream to make this pie, just 2 ingredients and an assortment of fresh berries... is all you need to make it.
I used low-fat Greek yogurt for my creamy filling and sweetened with some honey. Then I topped each layer of the yogurt cream with a layer of fresh seasonal berries. Gosh!... this was so easy and SO delicious!
Everyone loved it. No one could tell the cream was actually yogurt, haha... and that's a good thing.
I enjoy using the low-fat Greek yogurt that have the little compartment attached to it, the ones with the honey already in it. Then I used an already-made pie crust, and bought some baskets of some of our favorite berries, raspberries, blueberries and blackberries. You can use strawberries too. Not only did it add such vibrant colors to this pie, wow- the flavors were intense!
Just before serving, sprinkle some powdered sugar on top as the finishing touch. This mixed berry Greek Yogurt pie came together in no time at all, ending dinner with a healthy dessert.
Best of all? Next morning, I rewarded myself with a slice of this pie for breakfast.
Have a wonderful Memorial Day this weekend, and God Bless you and all our veterans!
5- Minute Mixed Berry Greek Yogurt Pie
Using one container of yogurt and stir in the honey.
Then spread evenly over the bottom of the pie crust.
Scatter some fresh berries, in one single layer over the yogurt.
Mix the berries as you scatter them. Don't worry, you won't need to cover the entire surface.
Next, in a small bowl, stir 3 more containers of yogurt with only 2 tablespoons of honey.
Spread the yogurt mixture over the berries to cover the first layer of berries entirely.
Then scatter the remaining berries over the yogurt, creating a second and final layer.
Sprinkle with powdered sugar on top.
Chill for a least 2 to 3 hours, or more before serving.
Yields: 10 to 12 servings
