Creamy Kiwaï with Fresh Mint



Kiwaï is something I discovered about two years ago here in France. This sweet sour fruit that looks like a kiwi inside, but in a mini version is filled with vitamins and in season right now !

2 servings
Ingredients:

10 kiwaï fruits

1 big tbsp almond butter (the best is to use the 'hard' texture, you know what can end up in the bottom of an almond butter jar?)
1 tsp lemon juice
3 fresh mint leafs

Place everything in a bowl, and mix with a hand mixer. Now you will have a creamy texture than you can enjoy as it is or place in a jar that is suitable for cold, and freeze it for 3 hours to make it to a fresh ice cream !
