Beetroot Hummus w. Cardamom & Cumin


There are different ways to make a beetroot hummus, you can make it raw, or cooked - to make it raw, you will need a pretty strong blender or mixer that can make it smooth or you can make it with cooked ingredients like this one. Both versions are delicious if you ask me.
Tasty colorful apero spread, to pasta or for your tacos !



Recipe

Fills a big glass jar

Ingredients:
2 garlic cloves
1 yellow onion
400g beetroot
1-2 tbsp virgin coconut oil for cooking
1 tbsp lemon juice
half tsp grounded cardamom

half tsp grounded cumin
salt & pepper


Peel and cut the garlics and onion, crush the garlic in thin pieces , using a garlic press or knife. Cut the onions in small cubes. Heat a frying pan with coconut oil, on middle heat.
Cook the onion and garlic, and start preparing the beetroot. Wash and peel, and cut the beetroot in smaller cubes. Then add to the pan.
Now cook for about 5 minutes while stirring, then add about half a normal sized drinking glass of cold water to the pan and cook for 15-20 more minutes until the beetroot is more softened.
Now add the 'stew' in a jar, together with the spices and lemon juice and mix with a mixer or if you have a kitchen aid.
You might want to add a bit more of water or oil to make the mixing process easier.

Taste, add salt and pepper as you like it and it is ready !
