FIKA time – Berry Muffin with Coconut and Vanilla..

Let’s get ready for the berry season!
Delicious when eaten fresh, but also bake with berries is just awesome.
1 tbsp honey or agave sirup
1 1/2 dl buckwheat flour
0,75 dl coconut- or olive oil
1/2 tsp grounded vanilla
1 dl berries
shredded coconut for garnish
Heat the oven to 200°c.
Mash the bananas with a fork in a bowl. Wait with the berries but add the rest of the ingredients and mix well. Now, add the berries and mix gentle into the mixture.
Separate the dough in small muffin forms, sprinkle some coconut flakes on top and bake for 15 minutes.
