Hot Summer – Cool Gazpacho…

Go to nearest bio market and by the seasons veggies, its time for enjoying (the one and only time they taste really good) tomatoes.
300 gram tomatoes (now is the season!)
2 tbsp virgin olive oil
One handful basil
One squeeze lemon
salt & pepper
1 pinch cayenne
water, around 1 cup – or for your desired texture
Served with pumpkin seeds and avocado for some extra dietary fibers and protein filled with zinc, vitamin E and other goods..
Rince the ingredients, cut the cucumber in smaller pieces and put everything in a blender. Mix on Pulse mode, until nice texture, I like leaving some pieces.
Serve direct, or put in fridge.
