Pink Enchantment Cupcakes

Happy Fifties Friday everyone! This recipe came from the recipe book called Enjoy Good Eating Every Day. These were SO delicious, they tasted like something my grandmother would have baked. Let’s get started!

Pink Enchantment Cupcakes

2 cups flour
1 & 1/4 cups sugar
2 & 1/2 tsps. baking powder
1 tsp. salt
1/2 vegetable oil
1/2 milk
1/4 cup maraschino cherry juice
1 tsp. vanilla
1 & 1/2 tsps. almond extract
3 egg whites

Step 1:
Combine all ingredients in large bowl with mixer. Next, add in the egg whites and mix until combined. Place in cupcake liners makes about 24. Bake at 350 for 16-18 minutes.

Petal Pink Frosting

2 egg whites
1 & 1/2 cups sugar
5 tbls. marachino cherry juice
1 tsp. light corn syrup
dash of salt
1 tsp. vanilla
1/2 tsp. almond extract

Step 1:
Add all ingredients into bowl, place over double boiler and use an egg beater to mix for 7 minutes or until peaks are stiff.

Step 2:
Add 2 marshmallows and mix until dissolved. Add cherries to the frosting and spread on the cupcakes!
