Pink Enchantment Cupcakes
2 cups flour
1 & 1/4 cups sugar
2 & 1/2 tsps. baking powder
1 tsp. salt
1/2 vegetable oil
1/2 milk
1/4 cup maraschino cherry juice
1 tsp. vanilla
1 & 1/2 tsps. almond extract
3 egg whites
Step 1:
Combine all ingredients in large bowl with mixer. Next, add in the egg whites and mix until combined. Place in cupcake liners makes about 24. Bake at 350 for 16-18 minutes.Petal Pink Frosting
2 egg whites
1 & 1/2 cups sugar
5 tbls. marachino cherry juice
1 tsp. light corn syrup
dash of salt
1 tsp. vanilla
1/2 tsp. almond extract
Step 1:
Add all ingredients into bowl, place over double boiler and use an egg beater to mix for 7 minutes or until peaks are stiff.
Step 2:
Add 2 marshmallows and mix until dissolved. Add cherries to the frosting and spread on the cupcakes!
